Authentic Gujarati Khichdi Kadhi Recipe

Gujarat, the State in India which boasts of one of the most delicious recipes that one can get in India. It is truly a State which has a tradition of making some mouth-watering tasty recipes like Undhia, Dhokla, Patra and the famous Kadhi Khichadi.

It can be said that the Gujarati people are one of the most friendliest people in India and their recipes too are as sweet and delicious matching up to their culture.

Let’s see how to prepare an Authentic Gujarati Kadhi Khichadi Recipe.

Ingredients for Khichadi:
3 cups moong dal (lentils)
2 cups of rice (preferably Basmati)
3 tablespoons of

Clarified Butter
9-10 black pepper corns
1 small onion (finely chopped)
1 potato (finely diced)
1 teaspoon turmeric powder
2 green chillies
2 teaspoon cumin seeds (Jeera)
Salt and lemon juice as per taste

Method of Preparation :
Wash the lentil and rice two to three times, draining off the water and keep it aside. Now take a vessel and add the clarified butter (ghee) to it. After the butter starts heating add the cumin seeds, pepper corns, onions and chillies for about 2-3 minutes and then add the diced potatoes along with the rice and lentils. Add in the turmeric powder and mix well. Now put in water as per requirement (generally 1 : 1.5 proportion of rice) Let this cook for 15-20 minutes till the rice is cooked. Do not overcook the rice but make a wet and soft gravy which is

smooth and a bit watery.

Your Khichadi is now ready.

Ingredients for the Kadhi :
3 cups of buttermilk
¼ cup chickpea flour (Besan)
2 tablespoons clarified butter (Ghee)
2 green chillies (finely chopped)
1 tablespoon cumin seeds (Jeera)
2 tablespoon fenugreek seeds (Methi)
5-6 curry leaves
Salt, sugar and asafetida as per taste
Coriander for garnishing (finely chopped)

Method of Preparation:
Take a vessel and add the buttermilk. Now keep on adding the chickpea flour (besan) slowly and stirring it all the time. This makes sure that there are no lumps formed. Keep on stirring the mixture till it becomes smooth and thick. Keep this aside.

Take another vessel. Add in the clarified butter and let it heat. Now add the cumin seeds, fenugreek seeds, asafetida and green chillies. Put in the curry leaves to this. After 2-3 minutes slowly add in the buttermilk mixture and then add 3 cups of water to the paste. Always keep the gas flame burning at the minimum. Stir this continuously till it becomes a little thick. Now add in the sugar and salt. Take it off the vessel and garnish it with coriander.

Your Gujarati Kadhi Khichadi Recipe is ready to be served.
